Slice up 3 onions thinly–today we used 2 vidalia and 1 red
Melt 4 tablespoons butter in a large (ideally cast iron) skillet
Put onions in skillet on medium heat, and cook until they are carmelized. Stir often-don’t let them burn!
This will take 30-40 minutes….be patient.
Then add 2 teaspoons balsamic vinegar and cook for 10 more minutes.

Put 1 pie crust (I buy mine) down on a parchment paper covered cookie sheet.
If it came in a pan, take it out of the pan.

Put mozzarella cheese on the crust. Leave 1.5 inch margin around the outsides.
Add onions.
Add more cheese
Fold the pie shell around the mix, leaving a circle of onion showing. This doesn’t have to be perfect….that’s why the name of this is “rustic.”
Bake in 450 oven for 10 minutes. Turn the oven down to 350 and bake 20-25 more minutes. Crust will be brown.
Let this rest 10 minutes before serving.

Not a fast meal, but it meets several Sarah criteria:
cheap, easy to make with ingredients I usually have on hand, and ONIONS make everything better!

Bake a pie crust at 450 for 5 minutes. I buy mine….any recipe is probably fine.
Slice up about 6 roma tomatoes, sprinkle on salt and let sit on paper towel for awhile
Mix topping up:
2/3 c mayonnaise (the real stuff, no substitutes)
1/3 c parmesan cheese
1/3 c mozzarella cheese
2 cloves minced garlic
Put tomatoes in partially baked shell. Add some pepper, and top with the mayo mix. Bake at 350 for 30-40 minutes. Tomatoes should be cooked, and the topping should have some brown spots.

I can’t seem to find recipes unless I stick them here, so here’s another one:
SALTED NUT ROLL BARS
1 yellow cake mix
1/4 c. melted butter
1 egg
3 c. miniature marshmallows
1 (12 oz.) pkg. peanut butter chips
1/2 c. corn syrup
1/2 c. butter
1 tsp. vanilla
2 c. peanuts
2 c. Rice Krispies
Mix cake mix, 1/4 cup butter, and egg. Press into 9 x 13 inch pan. Bake 10-12 minutes at 350 degrees. Place marshmallows over the top of that and return to oven 3 minutes more or until puffed up. Meanwhile, melt chips, corn syrup, and 1/2 cup butter. Add vanilla when melted. Pour over peanuts and Rice Krispies and mix. Spread over marshmallow layer. Refrigerate until set.

This recipe comes from Cindy, but most people think it is mine. (It’s not). This is the sort of recipe that drives me crazy, but here it is:
Put 4-8 cans of pork and beans in crockpot
add brown sugar (I use 1 # for 8 cans)
add ketchup (more than you can imagine)
add a big squirt of mustard
1/2 to 1 medium onion chopped (if you have someone that hates onions, you can halve the onion and bury it in the pot to get the flavor but not the pieces of onion)
I cook this on low for at least 6 hours. Before serving, there will be a lot of liquid on top–drain some of it off or the beans are very messy to serve.
These are very sweet, and many bean-haters will actually eat them.

4 avocados – soft and ripe
1 medium/small onion-diced
2 roma tomatoes, diced and seeded
1 clove garlic, minced
1 (up to 3) serrano chile, seeded and diced
Juice of 1 lime
Cilantro
Sale & pepper to taste
mix and let rest before serving
