Grandma Dene’s Ham & Noodle Casserole

I’ll eat anything with ham in it. Ham is my favorite food. This is a fall/winter recipe, and old-school (not healthy). But it reminds me of Grandma.

    Make as directed on package:

1 24-oz bag of frozen Reames egg noodles (no substitutes!)

    While that is cooking

dice 1 ham steak (I use Cook’s brand) into small cubes
and either (Grandma’s way) chop up 1 onion and fry in butter for awhile or
(my way) slice onion into thin slices and carmelize in cast iron skillet for 15 minutes (3T butter)

When noodles are finished, drain them and put them in a 2quart or larger casserole dish.
Add 1 stick butter (no substitutes) cut into cubes and allow to melt from heat of noodles
Add ham, onion, and lots of ground black pepper. You should be able to see pepper on the noodles or you don’t have enough.

Bake for 20-30 minutes to get the ham heated through. If you are in a hurry, you could throw the ham in with the onion and fry it a little bit, but I like the taste better when it’s been in the oven for awhile.

The verdict:
Sarah-carmelized onions are a nice change of pace.
